Salon des Refusés is an intimate Mediterranean seafood-driven restaurant in Central, operated by Black Sheep Restaurants and led by Chef Luca Marinelli and Chef Gabe Chan. Named after the unconventional art exhibition organized by Napoleon III in Paris in 1863, the restaurant features creative small plates inspired by sun-drenched Mediterranean flavors from the French Riviera and Amalfi Coast, with Asian (especially Japanese) influences. The menu changes daily based on fresh catches, ensuring no two experiences are the same. Standout dishes include cod tarama with radish, iwashi on toast with Japanese fruit tomato and Cantabrian anchovy, Hokkaido uni on toast with seaweed butter, bluefin tuna carpaccio with Calabrian chili oil, Hokkaido scallops in Pernod-laced sauce with Sicilian pistachio crumble, ma yau with sauce vierge, and red prawn carbonara. The restaurant offers an understated, elegant atmosphere that's smaller and more restrained compared to its sister restaurant Jean-Pierre next door. Advance reservation is highly recommended.
